Step 1 - Prep

Wash and dry all produce.* In a small pot, bring 3/4 cup salted water (double for 4 ppl) to a boil. Cut the tomatoes in half. Finely chop the parsley and mint leaves. Cut the apple(s) into 1/2-inch cubes. Zest, then juice the lemons. Cut the halloumi into 1/4- inch thick slices.

Step 2 - Cook bulgar

In a large bowl, combine the red onions with 1/4 cup lemon juice (double for 4 ppl). Set aside. Add the bulgur to the boiling water and remove from the heat. Cover with a lid and let stand until the bulger is tender and water has been absorbed, 15-16 min.

Step 3 - Prep halloumi

Meanwhile, pat the halloumi dry with paper towels. In another large bowl, whisk together the spice blend, 1 tbsp lemon juice (double for 4 ppl), 1/2 pkg honey (1 pkg for 4 ppl), and as much cayenne as you like. Add a drizzle of oil – just enough to make the mixture runny. Add the halloumi slices and coat all over.

Step 4 - Cook halloumi

Heat a large non-stick pan over medium-high heat. Add the halloumi to the dry pan. (Keep the marinade in the bowl – we'll use it later to drizzle over the finished dish!) Cook until golden-brown, 2-3 min per side.

Step 5 - Assemble tabbouleh

In the same bowl with the red onions, add the lemon zest, apples, tomatoes, parsley, half the mint and a drizzle of oil. (Taste and add more lemon juice, 1 tsp at a time, if you want the tabbouleh more tangy.)

Step 6 - Finish and serve

Stir the bulgur into the tabbouleh. Divide the tabbouleh between plates and serve with the smoky halloumi slices. Sprinkle with the remaining mint and drizzle with the remaining marinade.


Step 1 - Prep

Wash and dry all produce. Bring a large pot of salted water to a boil. Mince or grate the garlic. Thinly slice the green onions.

Step 2 - Cook noodles

Add rice noodles to the boiling water. Reduce the heat to medium. Cook, stirring occasionally, until the rice noodles are tender, 10-12 min. Drain and rinse the noodles under cold water.

Step 3 - Sear the beef strips

Meanwhile, pat the beef strips dry with a paper towel. Season with salt and pepper. Heat a large non-stick pan over medium-high heat. Add a drizzle of oil, then the beef. (TIP: Do not crowd the pan - work in batches if necessary.) Cook until browned, 1-2 min per side. Transfer the beef to a plate.

Step 4 - Cook broccoli

Add another drizzle of oil, then the garlic and green onions. Cook until fragrant, 30 sec. Add the carrots and broccoli. Cook, stirring often, until the veggies are tender-crisp, 3-4 min. Add the oyster sauce, soy sauce, brown sugar, 2 tbsp water, beef and noodles. Stir until warmed through, 1 min.

Step 5 - Drain noodles

Drain the rice noodles. Add the beef, carrots, and noodles to the pan. Stir until the carrots start to wilt and the noodles are warmed through, 1-2 min.

Step 6 - Finish and Serve

Divide the saucy beef noodles between plates and enjoy!


Step 1 - Prep

Wash and dry all produce.* Cut the sweet potatoes into 1/2-inch cubes. Peel and cut the shallots into 1-inch cubes. On a baking sheet, toss the sweet potato and shallot with a drizzle of oil. Season with salt and pepper. Roast in the centre of the oven, stirring halfway through cooking, until the veggies are golden-brown, 25-28 min.

Step 2 - Prep chicken

Meanwhile, mince or grate the garlic. In a large bowl, combine the honey, mustard, garlic and vinegar. Season with salt and pepper. Add the chicken and toss to coat. Set aside.

Step 3 - Prep zucchini 

Finely chop the parsley. Cut the zucchini into 1-inch pieces. On one side of another baking sheet, toss the zucchini and half the parsley with a drizzle of oil. Season with salt and pepper. Roast in the oven until golden brown, 18-20 min

Step 4 - Cook chicken

Meanwhile, heat a large non-stick pan over medium-high heat. Add the chicken. Cook until golden-brown, 2-3 min per side. (Keep remaining marinade for later use!) Transfer the chicken to the baking sheet with the zucchini. Roast in the oven until the chicken is cooked through, 7-10 min. (TIP: Cook each piece to a min. internal temp. of 165°F, size may vary**)

Step 5 - Cook sauce

Add the remaining marinade, any chicken juices from the baking sheet and 2/3 cup water to the same pan. Scrape up any brown bits from the bottom of the pan with your wooden spoon (this is where the flavour is). Bring to a boil over medium heat, simmer until the sauce reduces to half the amount, 1-2 min.

Step 6 - Finish and serve

Divide the chicken and veggies between plates. Drizzle with the pan sauce and sprinkle with the remaining parsley.
